The bacon-forward eatery is taking over the space where The Eggshell previously lived in Olde Town Arvada and anticipates opening in March or early April 2018.
But owner Jamie Shotton said the Taste of Arvada is the perfect time to connect with the community and gain feedback so that they can mold themselves into something residents want instead of forcing their concept.
“We want to immerse ourselves in the community,” Shotton said.
Shotton also runs the Flying Pig Burger Co. in Littleton. In Olde Town, he's planning to serve burgers as well, but also have more of a pig and bacon focus with an Asian slant and a 24-tap system focused on Colorado craft beer. To make up for the loss of breakfast in that space, Shotton also hopes to incorporate breakfast Thursday through Sunday with a traditional brunch on the weekends.
To introduce his concept to Arvada residents, Flying Pig Bacon Co. will be serving bacon-wrapped dates with a red wine reduction and pork belly steamed buns Oct. 26, at the Taste of Arvada held at the Apex Center and hosted by the Arvada Chamber of Commerce.
Flying Pig is one of 11 new eats and drinks that can be found at this year's Taste. They will join more than 20 food and drink vendors returning to the event.
Some of the returners include Steuben's, which took home prizes fro Best Savory Bite, Best Between the Buns and Best Overall Food and Drink at the 2016 Taste.
The Arvada Tavern, Fuzzy's and Odyssey Beerwerks, the top three 2016 Best Alcoholic Beverage winners, will also all be offering tastes again this year.
“Taste of Arvada is a wonderful opportunity for Arvada and Denver Metro community members to get a `taste' of Arvada cuisines and learn about new restaurants, bars and businesses in the area,” said Arvada Chamber President Kami Welch. “It allows businesses to showcase their finest culinary dishes and show Arvada natives and visitors the best dining our city has to offer.”
The event sold out last year, selling 400 more tickets that ever before. This year, a sellout is also expected.
